The New York Cheesecake is a traditional American cake and it is made with a fragrant biscuit base and a smooth soft cheese cream.
Thanks to its sweetness, softness and a sour zing from (due to both the cream topping and the berries), this cake will be able to satisfy even the most sophisticated tastes and a single bite will teleport you into one of the many bakeries in Times Square!

Serves: 8 people

Ingredients for the base:

  • 8.5 ounce digestive biscuits
  • 4 ounce butter

Ingredients for the cream:

  • 17.5 ounce Cream cheese
  • 3.5 ounce Fresh single cream
  • 2.5 ounce Sugar
  • 1 ounce Cornstarch
  • 1 medium-sized egg
  • 1 egg yolk
  • Lemon juice
  • Vanilla bean

Ingredients for the topping:

  • 3.5 Sour cream
  • Berries
  • Mint
  • Vanilla bean


  • Melt the butter and let it cool slightly until room temperature
  • crush the biscuits and pulse them with the butter in a food processor
  • Pour the mixture into a springform pan with wax paper on the bottom, making sure that the mixture is evenly spread both on the base and around the sides
  • refrigerate for 30 minutes
  • In a bowl beat the egg, yolk and sugar until it gets creamy
  • Add some of the vanilla bean, then add the cream cheese little by little and continue beating
  • Once all the cream cheese is poured, add the lemon juice and the cornstarch
  • continue stirring and add the fresh single cream
  • preheat the oven to 160 °C
  • Take the pan out of the fridge
  • evenly pour the cream onto the butter-biscuit mixture base
  • Bake the cake for 60 minutes, then increase the temperature to 170 °C and continue baking for 20 more minutes
  • When the time is up, turn the oven off and open it, let the cake rest for some minute.
  • mix the sour cream and the leftover vanilla bean together in a bowl
  • Pour the topping on top of the cake
  • refrigerate for at least 2 hours
  • garnish with berries and mint on top
